Baked Peanut Butter Blueberry Oatmeal

All right. I can’t seem to stop with the new baked oatmeals. That’s all I’m experimenting with these days, I guess. I love me some breakfast – especially when it’s baked oatmeal. So here you go. Here’s another one with peanut butter because yum. Peanut butter and blueberry baked oatmeal, your new favorite breakfast.

I threw this one together and hoped for the best. I had no idea what to expect, but I did want it to be delicious. It’s kind of like PB & J though! I’m sure it’d be awesome with strawberries too. When we have strawberries, I’ll try it then. But for now, I’m going to enjoy this one. 🙂

Baked Peanut Butter Blueberry Oatmeal

A delicious peanut butter blueberry oatmeal, the perfect protein- and fruit-packed breakfast.

What you'll need:
  • 1 ripe banana
  • 3 tbsp water
  • 1 tbsp ground flax
  • (optional) 1/8 tsp turmeric
  • 1 tbsp maple syrup
  • 1 tbsp peanut butter
  • 1/8 tsp cinnamon
  • 1/2 cup oats
  • 3 tbsp blueberries
What you'll do:
  1. Preheat oven to 375 degrees F (190 C) and ready a ramekin for baking with parchment paper or non-stick spray. (I don't use either of those--I bake right within my ramekin, eat straight from it, and wash or soak immediately.)

  2. Mash banana in small/medium mixing bowl. Add water and stir well to combine.

  3. Add ground flaxseed through cinnamon and stir well to combine.

  4. Mix in oats completely. Then add raisins and fold them in.

  5. Put mixture in ramekin and bake for 25 minutes. Let cool slightly and enjoy!
