Baked Chocolate Cherry Walnut Oatmeal

I’m back with a new baked oatmeal! Because what would this blog be without ANOTHER baked oatmeal recipe. Honestly. We don’t have enough of those around here, do we?

This one isn’t super groundbreaking. In fact, none of them are. But still. I think it’s delicious. A scrumptious combo that threw together nicely and made me super happy when it came out of the oven lookin’ like a whole snack. Well, lookin’ like a whole meal, to be honest. Nommm.

For real, this stuff is so good! I’d been adding my Easy Vegan Nutella to the top of my Baked Cherry Pie Oatmeal because why not, right? So this time, I figured – why not put it INSIDE that oatmeal? Oh yeah. Good idea. 😉

It worked so well! I added more cacao (also because why not?) and made it an actually chocolate cherry oatmeal. Then I added walnuts (because why not AGAIN, seriously), but you don’ thave to do that. I just love walnuts in everything. Fudgy Brownie Baked Oatmeal, Baked Apple Cider Oatmeal, Apple-Walnut Banana Bread Muffins, Hot Chocolate Golden Milk Latte… Why not add them here? It was a good idea. Trust me. 🙂

A super-yummy baked chocolate cherry walnut oatmeal naturally sweetened and easy to make!

What you'll need:
  • 1 ripe banana
  • 3 tbsp water
  • 1 tbsp maple syrup
  • (optional) 1/4 tsp turmeric
  • 1 tbsp ground flax
  • 1 tbsp Easy Vegan Nutella* (link in comments - or sub peanut butter)
  • 1 tbsp cacao/cocoa powder
  • (optional) 1/4 cup zucchini, grated
  • 1/2 cup oats
  • 2 tbsp walnuts, chopped
  • ~1/4 cup frozen cherries
What you'll do:
  1. Preheat oven to 375F and ready a ramekin. (I don't grease mine - I bake right in it.)

  2. In a small bowl, mash banana and then mix with water.

  3. Add maple syrup, (optional) turmeric, ground flax, Nutella/peanut butter, cacao, and (optional) zucchini and stir until mixed well.

  4. Add oats, walnuts, and cherries and mix until combined.

  5. Put mixture into ramekin and bake for 20-25 minutes (maybe longer - depends on how "done" you want it). Let cool for 10 minutes or so and then enjoy!
