On Saturday night, I asked Husband to make an Alfredo sauce for zucchini noodles because I’d been really wanting to eat it again since having some at our friends’ house a while back. He found this recipe for cashew Alfredo sauce and it turned out AMAZING. So I made him take a photo so I could share it with all of you great people for Meatless Monday. YUM! Enjoy!

Zucchini Noodles With Alfredo Sauce

A raw, creamy cashew alfredo over zucchini noodles. It's the perfect raw meal to tantalize your taste buds. Enjoy!

What you'll need:
- 1 cup water
- 1/2 cup raw cashews
- 1 tsp lemon juice
- 2 garlic cloves
- Salt and pepper to taste
- (optional) 1-2 tbsp nutritional yeast
- 4 small zucchinis, spiralized
- (optional) 2 cups broccoli florets, steamed
- (optional) 1 red pepper, steamed
What you'll do:

Heat water on stove until nearly boiling.

Pulse raw cashews in high-speed blender (like a Vitamix) until very fine.

Add hot water and process until smooth.

Add the rest of the ingredients and process until smooth.

Pour over zucchini noodles, add (optional) steamed broccoli and red pepper, and twirl with a fork.
