Baked Banana Churro Oatmeal

A yummy cinnamon oatmeal topped with cinnamon-sugar-dusted banana slices to make a delicious churro breakfast!

What you'll need:

  • 2 ripe bananas, divided (1 to mash, 1 to slice)
  • 3 tbsp water
  • 1 tbsp ground flax
  • (optional) 1/8 tsp turmeric
  • 1 tbsp maple syrup
  • 1/2 tsp cinnamon, divided
  • 1/2 cup oats
  • 1 tsp coconut sugar (or whichever granular sugar you have on hand)

What you'll do:

  1. Preheat oven at 350 degrees F (176 C) and ready your ramekin (either with parchment paper or nonstick spray - I choose to bake this oatmeal without either).

  2. Mash 1 banana in small/medium mixing bowl. Add water and stir well to combine.

  3. Add ground flax, turmeric, maple syrup, and 1/4 tsp cinnamon and stir well to combine.

  4. Mix in oats completely. Then put mixture in ramekin, slice the second banana, and add banana slices on top. Set aside.

  5. Stir 1/4 tsp cinnamon and 1 tsp sugar in a small bowl. Then sprinkle on top of banana slices as much as you want (I used about half of the mixture).

  6. Bake for 25 minutes and then let cool slightly before enjoying. :)
