A super delicious and sinfully sweet baked s'mores oatmeal made with fruit and oats, so it's still appropriate breakfast food yet sweet enough for dessert. It's vegan and gluten-free, so enjoy!
Preheat oven at 375 degrees F (190 C) and ready your ramekin (either with parchment paper or nonstick spray - I choose to bake this oatmeal without either).
In a medium bowl, mash banana. Then add water/milk, maple syrup, and flax/chia and mix well.
Stir in oats, then chocolate chips, then marshmallows. Crush/break up 3 vanilla wafers and mix gently. Then top with 1 crushed/broken-up wafer (and more chocolate/marshmallows if desired).
Pour mixture into your ramekin and bake for 20-22 minutes. Let cool slightly before enjoying!
