What you'll need:

  • 1 banana, ripe (fresh or frozen-thawed)
  • 3 tbsp water/plant milk
  • 1/2 - 1 tbsp maple syrup (to taste)
  • 1 tbsp ground flax/chia
  • 1/2 cup rolled oats (GF if needed)
  • 1 tbsp nondairy chocolate chips (or more as desired)
  • 1 tbsp marshmallows (vegan and GF // or more as desired)
  • 4 vanilla wafers (vegan and GF // or graham crackers - I had wafers on hand)

What you'll do:

  1. Preheat oven at 375 degrees F (190 C) and ready your ramekin (either with parchment paper or nonstick spray - I choose to bake this oatmeal without either).

  2. In a medium bowl, mash banana. Then add water/milk, maple syrup, and flax/chia and mix well.

  3. Stir in oats, then chocolate chips, then marshmallows. Crush/break up 3 vanilla wafers and mix gently. Then top with 1 crushed/broken-up wafer (and more chocolate/marshmallows if desired).

  4. Pour mixture into your ramekin and bake for 20-22 minutes. Let cool slightly before enjoying!
