A delicious, perfectly spiced baked sweet potato pie oatmeal that tastes like dessert but fits the breakfast bill. Enjoy any time of day!
Preheat oven to 350 degrees F (176 C) and ready your ramekin (either with parchment paper or nonstick spray - I choose to bake this oatmeal without either).
In a mixing bowl, mash sweet potato. Then add peanut butter, maple syrup, and water. Stir to combine.
Add cinnamon, flax/chia, (optional) turmeric, molasses, and vanilla and stir well. Then add oats and stir once more.
Place mixture in ramekin, top with pecans, and bake for 20-25 minutes, more if you want it more solid. Then let cool slightly and enjoy!
*You can use powdered or regular. Up to you!
