Baked Sweet Potato Pie Oatmeal

A delicious, perfectly spiced baked sweet potato pie oatmeal that tastes like dessert but fits the breakfast bill. Enjoy any time of day!

What you'll need:

  • 1/2 cup sweet potato (previously baked and cooled)
  • 1-2 tbsp peanut butter*
  • 2-3 tsp maple syrup (to taste)
  • 1/4 cup water
  • 1/4 heaping tsp cinnamon
  • 1 tbsp ground flax/chia
  • (optional) 1/8 tsp turmeric
  • 1/4 tsp molasses
  • 1/4 tsp vanilla
  • 1/2 cup oats
  • 5-6 Pecan halves for topping

What you'll do:

  1. Preheat oven to 350 degrees F (176 C) and ready your ramekin (either with parchment paper or nonstick spray - I choose to bake this oatmeal without either).

  2. In a mixing bowl, mash sweet potato. Then add peanut butter, maple syrup, and water. Stir to combine.

  3. Add cinnamon, flax/chia, (optional) turmeric, molasses, and vanilla and stir well. Then add oats and stir once more.

  4. Place mixture in ramekin, top with pecans, and bake for 20-25 minutes, more if you want it more solid. Then let cool slightly and enjoy!
