Sweet Pineapple Oatmeal

A fresh, sweet pineapple oatmeal made with homemade cashew milk, oats, flax/chia, and no added sweeteners! It's a delicious, natural breakfast - the perfect way to start your day.

What you'll need:

  • 2 cups oats
  • 2 cups cashew milk*
  • 1 ripe pineapple, chopped
  • 2 tbsp ground flax/chia
  • (optional) 1 tbsp maple syrup

What you'll do:

  1. To a small pot, add oats and cashew milk. Bring to a boil and then turn heat down.

  2. Let simmer until desired thickness is achieved, stirring occasionally.
  3. Add pineapple, flax/chia, and (optional) maple syrup and stir to combine.
  4. Transfer to bowls, let cool a little, and enjoy!

Recipe Notes

*This recipe is based on making this homemade cashew milk for the milk (and adding another 1/4 cup cashews for extra creaminess). You can make it with other nuts or use store-bought nondairy milk, but I can't guarantee that the results will be the same as the one we make.
