Fudgy Brownie Baked Oatmeal

Rich, warm, and super fudgy baked brownie oatmeal topped with walnuts and naturally sweetened. Made without oil, gluten, or animal products. So good!

What you'll need:

  • 1 ripe banana, mashed*
  • 1/4 cup water
  • 1 tbsp maple syrup (to taste - or sub 1-2 tbsp date paste)
  • 1 tbsp cacao powder
  • Pinch of salt
  • 1 tbsp ground flax/chia
  • (optional) 1/8 tsp turmeric
  • (optional) 1 tbsp peanut butter (powdered or regular)
  • 1/2 cup oats
  • 1-2 tbsp chopped walnuts

What you'll do:

  1. Preheat oven to 350 degrees F (176 C) and ready a ramekin.
  2. In a bowl, combine the first 3 ingredients.
  3. Then add everything else to bowl except the walnuts and mix well.
  4. Add mixture to ramekin and top with walnuts (or mix them in during step 3).
  5. Bake for 18-22 minutes. Enjoy.

Recipe Notes

*You can use fresh or frozen-thawed banana here. Both work just fine.
