Apple-Walnut Banana Muffins

Moist, delicious apple-walnut muffins made with oats, banana, applesauce, and no refined sugar or oil. They're the perfect vegan, gluten-free treat, snack, or breakfast!

What you'll need:

DRY

  • 2 1/4 cups oat flour (or ground rolled oats)
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • Pinch salt (pink Himalayan preferred)

WET

  • 3 ripe bananas
  • 1/3 cup applesauce or 1 apple
  • 1/3 cup maple syrup
  • 2 tsp vanilla
  • (optional) Handful greens of choice (I used spinach)

ADD-INS

  • 1/3 cup chopped walnuts
  • 1 apple

What you'll do:

  1. Preheat oven to 350 degrees F (176 C) and ready your muffin/cupcake pan/cups.
  2. Mix dry ingredients in a medium bowl.
  3. Blend wet ingredients in your blender.
  4. Add wet ingredients to the bowl with the dry ingredients and mix well. Then fold in add-ins.
  5. Fill 12 muffin cups with batter and bake 18-23 minutes. Then let cool slightly and enjoy!
