Chia Seed Pudding

A delicious fruit-sweetened chia seed pudding made with dates, tahini, and blueberries. It's the perfect way to pack fiber and plant-based nutrients into your morning!

What you'll need:

  • 1 cup water/nondairy milk
  • 4 medjool dates*
  • (optional) 1/4 tsp vanilla extract
  • 1/4 tsp cinnamon
  • (optional) 1/8 tsp turmeric
  • 1 tbsp tahini (or another nut/seed butter)
  • 1/4 cup chia seeds
  • 1/4 cup blueberries (frozen-thawed or fresh)

What you'll do:

  1. Add water, dates, vanilla, cinnamon, turmeric, and tahini to blender. Blend until smooth.
  2. Pour liquid into small bowl and add chia seeds. Stir until mixed well.
  3. Refrigerate for at least 20 minutes (I wait a couple of hours so the chia seeds puff up). Then add blueberries and enjoy!

Recipe Notes

*If your dates aren't sticky, soak in warm/hot water for 10-15 minutes. Then drain before using.
