Yes. Another oatmeal. But honestly, this one HAD to happen. Can you even believe that I hadn’t done this before? HOW? I have no idea. But once I saw that we did NOT in fact have a baked pumpkin pie oatmeal recipe on this blog, I knew I had to remedy that. STAT. And I did. And I’m happy to report that it’s worth the wait!
If you’re into sweet potato pie, you may want to try this baked sweet potato pie oatmeal out. Because it’s a totally legit way to eat pie for breakfast. It’s as easy as my other baked oatmeal recipes, though you do need to use cooked sweet potato. But baking a sweet potato is simple, so no worries. Just enjoy this (pie) for breakfast. Mmm!

This one comes from procrasti-baking. I really wanted second breakfast more than I wanted to start writing my next book (which, deep down, wasn’t even true, but I thought food couldn’t hurt anyway). So I gave this one a whirl. First, I scrolled through The Oatmeal Artist‘s blog to find some inspiration. Thought this one sounded delicious, but I didn’t have any zucchini on hand, though her blog always makes me wish I did. So I gave something similar a go with what I did have on hand, and YUM! Pure yum.
I’m back to having too many bananas and making new foods. Haha! But it’s all good because this one is delicious. I made them two different ways and I loved them both. So you’ll have to decide for yourself or try your own way! There are lots of options here. Anything can happen with the base recipe for these banana muffins. So here’s what I tried today (and super loved)!
Anyone want some no-bake whole-foods pumpkin pie? OMG you guys. This is so good! So full of flavor but without any of the junk. And the best part is that you can be lazy and not bake it. It’s fine on its own and needs no baking. The crust is super simple and delicious, and the filling is creamy and sweet without being overbearing. Plus, it’s perfectly spiced!
Today’s recipe is actually what you’d call dessert by its name, but you might find me eating this for breakfast, lunch, or dinner too. You’d eat bananas at any time of the day, right? Nuts aren’t a dessert food. Coconut water goes in all of my smoothies. And cacao? Well, okay. Maybe that’s the dessert part. Either way, this stuff is delicious! Enjoy any time.
