Blueberry Muffins (GF & Non-GF)

Do you follow Dr. Greger’s Daily Dozen? If you don’t, check it out! It’s a great way to focus on getting the right amount of whole plant foods into your diet. If you do, then you’ll recognize at least one of these ingredients as one of his must-includes each day: blueberries! Well, berries in general, but I freaking love blueberries. And who doesn’t love muffins?! So we put the two together for this delicious blueberry muffins recipe (which comes in both GF and non-GF). Call it breakfast. Call it a snack. Baked Piña Colada Oatmeal

When a friend comes up with a new baked oatmeal flavor, you try to make it. And sometimes you crush it in one try, like with this baked pina colada oatmeal. Mmmm, you guys!! This one is totally a hit. I absolutely love pineapple (see last week’s pineapple orange juice for further proof) and can’t wait to make more of this bad boy this summer. It’s like a delicious treat for breakfast, so you can’t go wrong.

Chocolate Chip Donuts

These donuts, you guys!! I love me some donuts, but I love when I can make them AND they’re delicious AND they’re sneakily healthy for me! These have fruit and oats, so they’re practically oatmeal. Which makes them the perfect breakfast! You can make these in advance, or you can eat them fresh and warm right out of the oven. Either way, you can’t go wrong. They stay soft and moist in an airtight container, but when the chocolate chips are still melty from the oven? STAHP. IT. Soooo good!

Chocolate Zucchini Muffins

Zucchini is my favorite thing to put in recipes these days. And I knew it was only a matter of time before I made zucchini muffins. Baked Sweet Potato Carrot Cake Oatmeal

Remember when we made sweet potato carrot cake muffins? No? Baked PB&J Oatmeal With Zucchini

Zucchini. In baked oats? Again? YES! The first time I did it was amazing, so I gave it another shot. Seriously, it’s my new favorite thing.
