Baked Pumpkin Pecan French Toast Oatmeal

It’s that time, y’all! PUMPKIN time!! I’m over here, sipping on a pumpkin pie smoothie (newer recipe coming soon!), having just finished writing a book, already wanting more of this pumpkin french toast oatmeal. Breakfast has never been more delicious this fall. Nommm. Let’s do it!

It’s super simple, you guys. I wouldn’t have it any other way. Simply mashed a banana in a bowl, add water, pumpkin, maple syrup, and spices, and then soak the bread. After you’ve added your oats and nuts, you pop it into the oven and wait (im)patiently for it to bake. Ta-da! Easy peasy fall-breakfast squeezy.

Try this pumpkin french toast oatmeal topped with pecans for a scrumptious fall breakfast that's easy to make! Totally vegan and can be GF!

Course: Breakfast
Cuisine: Gluten-Free, Vegan

What you'll need:
  • 1 ripe banana, mashed
  • 3 tbsp water/nondairy milk
  • 1/4 cup pumpkin puree
  • 1 tbsp maple syrup
  • 1/8 tsp cinnamon
  • 1/8 tsp pumpkin pie spice
  • 1/8 tsp turmeric
  • 1 dash black pepper
  • 1 tbsp ground flax/chia
  • 1 slice bread (use GF if GF / I like whole-wheat hot dog or hamburger buns for their thickness)
  • 1/4 cup oats
  • 1-2 tbsp pecan pieces
What you'll do:
  1. Preheat oven at 375 degrees F (190 C) and ready your ramekin (either with parchment paper or nonstick spray - I choose to bake this oatmeal without either).

  2. In a medium bowl, mix mashed banana, water/milk, pumpkin maple syrup, cinnamon, pumpkin pie spice, turmeric, black pepper, and flax well.

  3. Add chunks of bread and mix them so they soak the mixture up. Add oats and mix to combine. Then add pecan pieces and mix (or leave some to sprinkle on top).

  4. Pour mixture into your ramekin and bake for 20-24 minutes. Let cool slightly before enjoying!

Avocado Breakfast Sandwich

I mean, does it get any better than avocado for breakfast? I thought avocado toast was the be-all and end-all. But then I went to The Nile and got their inspired version and my life was never the same. So Husband, being the amazing overachiever he is, had to make his own at home. And YAASSSS, y’all. SO good. So I did what I do and made my GF version as a breakfast sandwich. Thank the heavens above for Kite Hill cream cheese and homemade English muffins.

A delicious and easy-to-make breakfast sandwich with avocado, cream cheese, tomato, and cashew parm. All on a homemade English muffin. GF + V!

Course: Breakfast
Cuisine: Gluten-Free, Vegan

What you'll need:
English Muffin*
  • 1/3 cup oats
  • 1 tbsp chia seeds
  • 1/4 rounded tsp baking powder
  • 2 tbsp applesauce (no sugar added)
  • 1 tbsp water
Sandwich
  • 1-2 tbsp vegan cream cheese (I used Kite Hill plain)
  • 1/2 small avocado
  • 1 slice tomato
  • 1/4 tsp everything-bagel seasoning (or cashew parmesan**)
  • (optional) 1/4 tsp seeds (pumpkin, sesame, sunflower, etc.)
What you'll do:
English Muffin
  1. Preheat oven to 350 degrees F (176 C) and prepare a ramekin with parchment paper or a small spray of oil.

  2. Add oats, chia seeds, and baking powder to a small food processor or grinder like a Magic Bullet and grind into a flour. Put oat flour in a small bowl and mix applesauce and water with it to create a dough. 

  3. Put dough into ramekin and smooth the top of it so it's flat. Then bake for 18 minutes or until the top is slightly golden brown and firm when pressed. Let cool for 15 minutes and then slice and toast while you slice your avocado and tomato.

Sandwich
  1. Spread cream cheese on both slices. Then add avocado, tomato, and seasoning/cashew parmesan (plus any optional toppings like seeds) to one slice and top with the other. Enjoy! Best when fresh.

Recipe Notes

*English muffins (originally from The Big Man's World) can be made ahead and refrigerated until ready to use. They're good in the fridge up to 5 days. I have not yet tried freezing them, but I will and report back. If you do, let us know how it goes!
**Cashew Parmesan recipe. Add 1/4 tsp onion powder as well.

This apple pie smoothie, y’all. There’s something about it that’s super comforting. It reminds me of happiness and a simple way of life. It’s sweet and perfectly spiced, and though it’d be better in the fall, I’m all about bring fall to me right now (like we did with the Baked Apple Cider Oatmeal). Mine’s green because I add greens, but you don’t have to. Starting with a base of bananas is a good idea though. Then we add all the other amazing ingredients, like apple, dates (for sweetness though optional), cinnamon, nutmeg, walnuts, oats, and flax/chia. You can even include maca or turmeric (+ black pepper for more turmeric bioavailability) for an even healthier drink!

Apple Pie Smoothie

A smooth, sweet, creamy, and perfectly spiced apple pie smoothie perfect for breakfast on a fast-paced morning. Throw in the blender and go!

Course: Breakfast
Cuisine: Gluten-Free, Raw, Vegan

Servings: 1 - 2
What you'll need:
  • 1-2 ripe bananas (frozen works best)
  • 1 cup water
  • 1 handful greens (I chose power greens)
  • 1 apple, roughly chopped (I prefer pink lady or honeycrisp)
  • 1/4 cup oats
  • (optional) 1-2 dates, pitted (for sweetness)
  • 1 small handful walnuts
  • 1/2 tsp cinnamon
  • 1 tbsp ground flax/chia
  • 1 pinch nutmeg
  • (optional) 1/4 - 1/8 tsp turmeric (+ a dash of black pepper for better bioavailability)
  • (optional) ice (as needed)
What you'll do:
  1. Add all ingredients to blender one by one. Then blend until smooth and well combined.

  2. Pour into glass and enjoy. Store leftovers covered in refrigerator for up to 48 hours, though best when fresh.

Baked Golden Milk Oatmeal

Clearly, I love golden milk. I make lattes, cookies, hot chocolate, smoothies… I can’t quit it. I don’t want to. So, today, we’re making a baked golden milk oatmeal to feed the obsession. I mean, when it’s healthy for you, is it really that wrong? Nope. I think not. So let’s do this!

This one starts out like all the rest: banana. But there’s no water needed this time because we’re using some of our golden milk latte instead. I haven’t quite figured out the right way to spice it yet without using part of the GML batch, but that’s probably because I nearly always have some GML in the fridge, waiting to be warmed up. So I’ll work on that. For now, behold!

It has that rich golden milk flavor, but it’s also sweet and comforting. The warmth from the spices matches the heat of the oatmeal once it’s been baked, and the walnuts on top give it a perfect texture combo, IMO. I’m really loving this flavor – and I look forward to making a chocolate version with the Hot Chocolate Golden Milk Latte recipe, which you can easily do with this!

A sweet, perfectly spiced baked golden milk oatmeal wonderful for a healthy, warm breakfast. Naturally sweetened and super delicious!

Course: Breakfast
Cuisine: Gluten-Free, Vegan

What you'll need:
  • 1 ripe banana, mashed*
  • 1/2 cup zucchini (peeled and grated)
  • 1/4 cup Golden Milk Latte** (recipe in notes)
  • (optional) 2 tsp maple syrup (to taste - or sub 1 tbsp date paste)
  • 1 tbsp ground flax/chia
  • 1/2 cup oats
  • 1-2 tbsp chopped walnuts
What you'll do:
  1. Preheat oven to 350 degrees F (176 C) and ready a ramekin for baking with parchment paper or non-stick spray. (I don't use either of those - I bake right within my ramekin, eat straight from it, and wash or soak immediately.)

  2. Mash banana in small/medium mixing bowl. Add golden milk latte, zucchini, and (optional) maple syrup and stir well to combine.

  3. Add flax/chia and oats and stir again. You can add (some or all of the) walnuts here and stir or wait until the next step.

  4. Put mixture in ramekin and top with walnuts. Then bake for 20 minutes and let cool slightly before enjoying.

*You can use fresh banana or frozen-thawed banana. I've done both and they both work well.

Let’s pretend it’s fall, okay? This baked apple cider oatmeal tastes like fall, and we could all probably use a touch of autumn in the dead of summer. It’s intensely hot out there, but if it’s cool enough in the morning, you won’t regret making this dish for breakfast. You can also save this recipe for the fall though. Or…just do both. That’s what I’m gonna do! So let’s do this!

If you’re into sweet potato pie, you may want to try this baked sweet potato pie oatmeal out. Because it’s a totally legit way to eat pie for breakfast. Baked Piña Colada Oatmeal

When a friend comes up with a new baked oatmeal flavor, you try to make it. And sometimes you crush it in one try, like with this baked pina colada oatmeal. Mmmm, you guys!! This one is totally a hit. I absolutely love pineapple (see last week’s pineapple orange juice for further proof) and can’t wait to make more of this bad boy this summer. It’s like a delicious treat for breakfast, so you can’t go wrong.

Baked Peanut Butter Apple Oatmeal

This one got a huge “YES!” from Husband. I *really* wanted jelly-filled peanut butter muffins but thought I’d make a jelly-filled peanut butter oatmeal instead. When I asked Husband if he had a flavor preference for a baked oatmeal, he looked at me with stars in his eyes and said, “We have apples!” So peanut butter apple it was. And dude. SO glad we did it. Mmmmmm!!
