All right. I can’t seem to stop with the new baked oatmeals. That’s all I’m experimenting with these days, I guess. I love me some breakfast – especially when it’s baked oatmeal. So here you go. Here’s another one with peanut butter because yum. Peanut butter and blueberry baked oatmeal, your new favorite breakfast.
Today is RAWctober day 1. It’s a whole month of raw vegan eating. I don’t have a ton of raw recipes on here, but I’ll probably post more as the month goes on. Like this one! A seriously yummy and creamy chocolate blueberry smoothie perfect for some added sweetness to your day. Enjoy!

If you do, then you’ll recognize at least one of these ingredients as one of his must-includes each day: blueberries! Well, berries in general, but I freaking love blueberries. And who doesn’t love muffins?! So we put the two together for this delicious blueberry muffins recipe (which comes in both GF and non-GF). Call it breakfast. Call it a snack. It doesn’t bother me what you call it as long as you enjoy it. 🙂
I wanted something fresh, sweet, and really delicious, and a smoothie usually quenches that. Blueberries are a main staple in my diet, and they’re also fresh, sweet, and really delicious. So I figured I’d start there – with a blueberry pie smoothie. Smoothies are so refreshing! And it’s already heating up here in Phoenix, so this hits the spot.

So we’ve definitely made baked French toast oatmeal before, yeah? And it was super good, right? Well, let’s kick things up a notch. Let’s add more nutrition, more sweetness, and more FRUIT! Because that’s what we do. We fruit SO hard. 😉

This one came from an intense need to make blueberry oatmeal. I put blueberries in my smoothies (along with flax, turmeric, cinnamon, banana, and walnuts) nearly every time I make them, so maybe I really wanted the oats part? I don’t know. But anyway, I’m glad I did because this is bomb AF.
Don’t let the name fool you. I’m actually eating this for breakfast today, so it’s not necessarily a pudding dessert. (These are dessert!) But it’s sweet and delicious and super good for you, so today, it’s breakfast. 🙂 It needs a little bit of time to set, but other than that, this is pretty simple. Throw stuff in a blender, pour it into a bowl, add chia seeds and blueberries, and enjoy!
Here’s a breakfast dish for you! I think I do a lot of lunch/dinner meals. This one is vegan and gluten-free as usual. It’s simple but still delicious. So simple that you don’t have to watch over the stove. Just boil water, soak the oats, and add your toppings. That’s it. Because I’m lazy and I don’t want to watch it while it cooks. Haha. 🙂
