Blueberry Muffins (GF & Non-GF)

Do you follow Dr. Greger’s Daily Dozen? If you don’t, check it out! It’s a great way to focus on getting the right amount of whole plant foods into your diet. If you do, then you’ll recognize at least one of these ingredients as one of his must-includes each day: blueberries! Well, berries in general, but I freaking love blueberries. And who doesn’t love muffins?! So we put the two together for this delicious blueberry muffins recipe (which comes in both GF and non-GF). Call it breakfast. Call it a snack. It doesn’t bother me what you call it as long as you enjoy it. 🙂

Blueberry Pie Smoothie

I wanted something fresh, sweet, and really delicious, and a smoothie usually quenches that. Blueberries are a main staple in my diet, and they’re also fresh, sweet, and really delicious. So I figured I’d start there – with a blueberry pie smoothie. Smoothies are so refreshing! And it’s already heating up here in Phoenix, so this hits the spot.

Baked Blueberry Pie Oatmeal

This one came from an intense need to make blueberry oatmeal. I put blueberries in my smoothies (along with flax, turmeric, cinnamon, banana, and walnuts) nearly every time I make them, so maybe I really wanted the oats part? I don’t know. But anyway, I’m glad I did because this is bomb AF.

Blueberry Chia Seed Pudding

Don’t let the name fool you. I’m actually eating this for breakfast today, so it’s not necessarily a pudding dessert. (These are dessert!) But it’s sweet and delicious and super good for you, so today, it’s breakfast. 🙂 It needs a little bit of time to set, but other than that, this is pretty simple. Throw stuff in a blender, pour it into a bowl, add chia seeds and blueberries, and enjoy!

Soaked Oatmeal

Here’s a breakfast dish for you! I think I do a lot of lunch/dinner meals. This one is vegan and gluten-free as usual. It’s simple but still delicious. So simple that you don’t have to watch over the stove. Just boil water, soak the oats, and add your toppings. That’s it. Because I’m lazy and I don’t want to watch it while it cooks. Haha. 🙂
