A lot of you guys have been waiting for this one. I know. I’m sorry. I liked the way these tasted right after I made them, but they kept getting really dry. Finally got it right. So here it is! Peanut Butter Fudge Bites. These are a delicious, healthier snack or dessert perfect to keep in the freezer or fridge for when you need them. And you need just 4 simple ingredients. Let’s get to it!
This one comes together with coconut flour (which keeps it GF) and maple syrup (which keeps it naturally sweetened). Peanut butter and sweet potato make up the rest of it – and the sweet potato makes these bites stay moist and yummy!
Can peanut butter do any wrong? No. The answer is N-O. No. It’s way too good, and it’s super easy to make it into something even more delicious and good. And this fudge is one of those things. Plus, it’s so freaking simple to put together. You really cannot go wrong here.
You can even customize these to include some other mix-ins! Mini (nondairy) chocolate chips worked really well for me. But you could also add raisins or other dried fruit, shredded coconut, or anything else your heart desires. The possibilities are endless, you guys. So have some fun!

Creamy, sweet peanut butter fudge bites made in less than 10 minutes from 4 simple ingredients! Totally easy, vegan, gluten-free, and delicious. Perfect for a protein-filled snack or dessert!
- 1/4 cup sweet potato (baked and cooled)
- 1/3 cup coconut flour
- 1/4 cup peanut butter*
- scant 1/4 cup maple syrup
- (optional) 1/8 tsp salt (if your PB is unsalted)
- Mini nondairy chocolate chips
- Shredded coconut
- Raisins (or other dried fruit)
Add all ingredients to a mixing bowl and stir well to combine. Add more coconut flour if it's too wet and more peanut butter/maple syrup/sweet potato if it's too dry. You should be able to pick it up with your hands and knead it easily.
Pinch off small pieces of the dough (about 1-tbsp amounts) and roll into a ball between your palms. Set them in an airtight container you can put in the freezer.
Freeze for an hour to set. These can be stored in there up to a month. Alternatively, store them in the refrigerator for up to a week (though mine never last that long because I eat them all).
*I haven't tried it with powdered peanut butter, so I can't say if that'll work. But it might when added to water or a nondairy milk. If I test it this way, I'll update this recipe! Mine were made with organic natural creamy PB, though crunchy would work too.
*I also think these would be great with almond butter or even cashew butter, but I have only tried these with PB. Let me know in the comments if you try them with another butter!
