You guys. These no-bake chocolate brownie bites are SO fudgy. SO sweet. SO delicious. SO vegan and gluten-free. And SO easy! You can make these with 5 natural and common ingredients you might even have in your kitchen right now. And you can customize these as much as you’d like with other mix-ins! So get into the kitchen with me and make these irresistible brownie bites!
You have your choice of easy or even easier here. You can used baked and cooled sweet potato (which is easy), or you can use mashed banana instead (which is even easier). And we use coconut flour so this recipe stays GF as well as freaking delicious and super simple (i.e. no-bake!). Plus, you can include chocolate chips, dried fruit, shredded coconut, or other mix-ins to make these even more amazing! Though they’re superb as is. Trust me.
These are so yummy refrigerated and chilled. They don’t last long in this house, so I have no idea if they freeze well. Sorry! That’s just how it goes here. Maybe I’ll try again, but I can’t guarantee anything. The only thing I can guarantee is that you’ll want to make some baked oatmeal with these. Because OMG. HELLO. Breakfast just got sexy.

Seriously fudgy and delicious no-bake brownie bites made with 5 simple ingredients. Nothing complicated here. Just chocolaty pieces of heaven to enjoy whenever you want a sweet snack.
- 1/4 cup coconut flour
- 1/4 cup cacao powder
- 1/4 cup nut/seed butter*
- 1/4 cup mashed banana (or peeled/cooked/cooled sweet potato)
- 1/4 cup maple syrup
- (optional) Pinch of salt (if your nut/seed butter is unsalted)
- Chocolate chips (nondairy)
- Dried fruit
- Coconut shreds
To a medium bowl, add coconut flour and cacao powder and mix well.
Add the rest of the ingredients and stir to combine until a fudgy batter forms. If it's too dry, add more maple syrup or nut/seed butter. If it's too wet, add more coconut flour. Taste and adjust flavor as needed, and add any optional mix-ins here.
Remove in 1 tbsp increments and form into bites by rolling dough between your palms. If you choose to, roll bites around in optional toppings of choice or press toppings into bites.
Put in airtight container and freeze. Enjoy straight from the freezer or let thaw for a minute or two. Or keep in the refrigerator up to 4 days.
*I used peanut butter, but these would be divine with almond butter. Any nut or seed butter will work here though - crunchy or creamy.
