Baked Chocolate Strawberry Oatmeal

I’m eating this baked chocolate strawberry oatmeal as I write up this post, and y’all? MMM! So good. It’s perfect for this morning, when we still had a chill in the air by 7:30. In May. WOW. But anyway, I digress.

Back to talking about this oatmeal.

Why haven’t I put it on the blog sooner? It’s not usually my go-to. This chocolate cherry one is. But our local grocery store had organic strawberries on sale for SUPER cheap and they were SUPER good, so I bought a lot of containers. Thus, this oatmeal has been made a few times. Also strawberry French toast oatmeal. And strawberry jam. And strawberry pie oatmeal (which you could follow this recipe for and swap blueberries for cut-up strawberries. Easy peasy!).

Buckwheat Bagels

Okay, y’all. Let’s talk about these buckwheat bagels. Yeast is hard to find these days, and I’ve been GF (with a couple of meals as exceptions) since the beginning of the year. So I’m taking some time to learn more about GF/V baking when it comes to bread that doesn’t have yeast. SO FUN! Hahaha.

Actually, it has been. And this has been the highlight, I think. These bagels started out as a bread recipe recommended by a GF/V friend – shoutout to Miss Jackie O – and have now morphed into this version. And I have to say that I like this recipe a whole lot better as bagels because my loaf pan is pretty big. If you have a smaller loaf pan, feel free to bake this like bread! You can try doubling the recipe for a regular loaf pan, but I have not yet. Let me know if you do.

The Easiest Berry Jam Ever

If you’re like me in these self-isolating times, you’re probably getting creative in the kitchen. I’ve been making a ton of baked oatmeals – including a PB&J one using this new jam I made!

I’m also trying to simplify my nutrition, so making things at home instead of buying from the grocery store makes more sense – especially when it can be hard to find items you normally buy. So I looked up some recipes and started making my own jam. And I can’t even explain how easy it is!

Basically, pick the berry you want to make jam from. I’ve tried cherries, raspberries, and peaches. So far, the berries have worked the best, and I look forward to trying blueberry and strawberry – and probably a combo of any of these together! The peaches – eh. Those would have needed more cooking time and I got impatient. I’ll maybe report back later if I try again.

Golden Milk Mix

Nearly every single day, I make a golden milk latte. No coffee for me though, so it’s basically turmeric and other spices and adaptogens in the walnut/pepitas milk I make (1/2 cup walnuts/pepitas combined, 6 cups water, 12 medjool dates – blend) or my homemade cashew milk. But I thought I’d make it a little easier on myself by making a premade mix so I didn’t have to open up all of my spices and containers each time.

You know I’m all about food prepping these days, so it made sense to simplify this too. 🙂

Baked Pumpkin Pie Oatmeal

Yes. Another oatmeal. But honestly, this one HAD to happen. Can you even believe that I hadn’t done this before? HOW? I have no idea. But once I saw that we did NOT in fact have a baked pumpkin pie oatmeal recipe on this blog, I knew I had to remedy that. STAT. And I did. And I’m happy to report that it’s worth the wait!

Pumpkin Spice Golden Milk Latte

Finally! Not another oatmeal! And this one is PERFECT for the beautiful fall weather we’re not really experiencing here in Phoenix… LOL. Honestly, I don’t care if it’s still over 90F. I’m drinking this creamy, dreamy, delicious pumpkin spice golden milk latte anyway. Bet. 😉

I’m NOT a coffee drinker, so anything called “latte” in my book doesn’t have coffee. But if you want to add some, feel free to replace some of the water with it. My version has no caffeine, no refined sugar, and no hard-to-find or artificial ingredients. It’s easy peasy from start to finish, so let’s do this.

Baked Banana Churro Oatmeal

Who’s surprised that this is another baked oatmeal recipe? No, not you? Yeah, me either. But this one was inspired by an air fryer cookbook I received for review from a friend of mine. This is not the recipe from her book, but I can’t wait to try that one (along with all the other ones in there because they all sound AMAZING)!

Baked Peanut Butter Blueberry Oatmeal

All right. I can’t seem to stop with the new baked oatmeals. That’s all I’m experimenting with these days, I guess. I love me some breakfast – especially when it’s baked oatmeal. So here you go. Baked Cinnamon Raisin Oatmeal

Okay, yeah. Another baked oatmeal. This one was by request though. Husband loves cinnamon raisin (while I think it’s gross – we all know that raisins are a big reason why we have trust issues because they should be chocolate chips), so I whipped this one up. Peanut Butter Chocolate Chip Baked Oatmeal

Yup. Another baked oatmeal. I’m on a roll with these lately. Though I need to ask this question: How was this not already a recipe on this blog?! It’s another one that isn’t groundbreaking. Not. At. All. It should have been up here a long time ago, but I honestly don’t think I made it before. Definitely won’t make that mistake again. LOL.

It’s the perfect marriage of peanut butter and chocolate – so move over, Reese’s, with your nonvegan candy. Let’s eat PB and chocolate chips for breakfast and call it a damn good day, shall we? 🙂
