Baked Cinnamon Raisin Oatmeal

Okay, yeah. Another baked oatmeal. This one was by request though. Husband loves cinnamon raisin (while I think it’s gross – we all know that raisins are a big reason why we have trust issues because they should be chocolate chips), so I whipped this one up. Hopefully you raisin-loving weirdos enjoy this one. 😉

I heard good things about this one, but I have to admit that I didn’t try it. The base is the same as most of my baked oatmeals, so there’s that. Then I added cinnamon and raisins and voila! This oatmeal was born. It’s easy peasy, and it’s a great warm breakfast to throw together. Let me know what you think!

If you like oatmeal, check out my other baked oatmeals! Some of my faves are Chocolate Cherry WalnutFrench Toast, and Carrot Cake. I have a ton of different kinds though, so poke through and try some new ones. A warm cinnamon raisin oatmeal breakfast perfect for an easy-to-bake meal in the morning.

Course: Breakfast
Cuisine: Gluten-Free, Vegan
Keyword: Baked Oatmeal
Servings: 1
What you'll need:
  • 1 ripe banana
  • 3 tbsp water
  • 1 tbsp ground flax
  • (optional) 1/8 tsp turmeric
  • 1 tbsp maple syrup
  • 1/8 tsp cinnamon
  • 1/2 cup oats
  • 1-2 tbsp raisins
What you'll do:
  1. Preheat oven to 375 degrees F (190 C) and ready a ramekin for baking with parchment paper or non-stick spray. (I don't use either of those--I bake right within my ramekin, eat straight from it, and wash or soak immediately.)

  2. Mash banana in small/medium mixing bowl. Add water and stir well to combine.

  3. Add ground flaxseed through cinnamon and stir well to combine.

  4. Mix in oats completely. Then add raisins and fold them in.

  5. Put mixture in ramekin and bake for 20-25 minutes. Let cool slightly and enjoy!
