I’m eating this baked chocolate strawberry oatmeal as I write up this post, and y’all? MMM! So good. It’s perfect for this morning, when we still had a chill in the air by 7:30. In May. WOW. But anyway, I digress.
Back to talking about this oatmeal.
Why haven’t I put it on the blog sooner? It’s not usually my go-to. This chocolate cherry one is. But our local grocery store had organic strawberries on sale for SUPER cheap and they were SUPER good, so I bought a lot of containers. Thus, this oatmeal has been made a few times. Also strawberry French toast oatmeal. And strawberry jam. And strawberry pie oatmeal (which you could follow this recipe for and swap blueberries for cut-up strawberries. Easy peasy!).
So yeah. This recipe was bound to happen and I’m so glad it did. Though this time I decided to leave the peanut butter out in favor of lowering my fat intake (nothing crazy is happening here, just going back to a more nutritarian lifestyle!), but you’re more than welcome to toss that in for a richer chocolaty taste. 🙂
Otherwise, have fun! It’s so similar to all the others I’ve made, so if you know the drill by now, you know how this will go. If not, it’s easy to do! No crazy kitchen equipment needed, though it does bake a while. But it could be eaten as overnight oats if you let it sit for 10 minutes or overnight in the fridge! Totally up to you. Enjoy!

A delicious baked chocolate strawberry oatmeal that tastes like a brownie but is perfectly healthy for breakfast!
- 1 ripe banana (fresh or frozen/thawed)
- 3 tbsp water
- 2 tbsp date paste (to taste - or 1 tbsp maple syrup)
- (optional) 1 tbsp peanut butter
- (optional) 1/3 cup grated zucchini
- (optional) 1/4 tsp golden milk mix* (recipe in notes)
- 1 tbsp ground flax
- 1 tbsp cacao powder
- 1-2 chopped strawberries (fresh or frozen)
- 1/2 cup oats
- (optional) 1 large pinch hemp seeds (and/or even pumpkin seeds)

Preheat oven at 375 degrees F (190 C) and ready your ramekin (either with parchment paper or nonstick spray - I choose to bake this oatmeal without either).

Mash banana in small/medium mixing bowl. Add water and stir well to combine.

Add date paste through cacao powder and stir well to combine.

Mix in chopped strawberries (saving some for topping if you'd like).

Mix in oats completely. Then put mixture into ramekin and top with (optional) hemp seeds.

Bake for ~25 minutes. Let cool a bit before you enjoy!
**I added all optional ingredients except peanut butter, and I used date paste. But I love both maple syrup and peanut butter in this dish.
