It’s a baked oatmeal day. I mean, when isn’t it? Even when it’s 110F here in Phoenix, I still don’t mind baking up a delicious oatmeal. Because mmm! And this one is no exception, even with minimal common ingredients. It’s totally fruit-sweetened too, which makes me super happy. So let’s get into the kitchen while it’s still cool and make this yummy baked cherry pie oatmeal!
This one starts as most of my baked oatmeals do: mashed banana. We include applesauce in this one to make it fruit-sweetened, and the rest of the ingredients are simple! Cinnamon, oats, walnuts, cherries, and flax/chia. Plus, you can add turmeric because why not? It won’t change the taste, so you might as well get more health benefits from this!
I love how easy these things are. You mix some stuff together, put it in a ramekin, and then throw it in the oven. Simple as can be!
And you can customize this if you’d like! You can make it a chocolate-cherry pie, or you can top it with some shredded coconut. Or come up with something totally different! The choice is yours, my friend.

This fruit-sweetened baked cherry pie oatmeal has so much flavor! Enjoy this vegan, gluten-free, oil-free, and sugar-free breakfast like this whenever you'd like.
- 1 ripe banana*
- 3 tbsp water
- 1/8 - 1/4 tsp cinnamon
- (optional) 1/8 tsp turmeric
- 1 tbsp ground flax/chia
- 1 tbsp applesauce
- 1/2 cup oats
- 1/4 cup cherries, frozen or fresh (less if you don't want so many)
- 1-2 tbsp crushed walnuts
Preheat oven to 350 degrees F (176 C) and ready a ramekin for baking with parchment paper or non-stick spray. (I don't use either of those - I bake right within my ramekin, eat straight from it, and wash immediately.)
In a medium mixing bowl, mash banana, add water, and mix. Then add cinnamon through applesauce and mix well.
Add oats and mix before adding cherries (and walnuts - or skip to next step) and folding those in.
Add oatmeal to ramekin and sprinkle crushed walnuts on top.
Bake for 20-24 minutes and enjoy!
*You can use fresh banana or frozen-thawed banana. I've done both and they both work well.
