Baked Banana Churro Oatmeal

Who’s surprised that this is another baked oatmeal recipe? No, not you? Yeah, me either. But this one was inspired by an air fryer cookbook I received for review from a friend of mine. This is not the recipe from her book, but I can’t wait to try that one (along with all the other ones in there because they all sound AMAZING)!

So, without further ado, thank you to Tess Challis for The Essential Vegan Air Fryer Cookbook! Because without it, we would not have this Baked Banana Churro Oatmeal today!

This is another one I threw together and hoped for the best. The base of all of my baked oatmeals is pretty much the same, so there isn’t room for much to go wrong. I have a lot to work with, but it’s pretty forgiving. So we’ve got the classic cinnamon oatmeal underneath with banana slices on top, which are dusted with cinnamon sugar. Easy peasy. 🙂

Tess Challis’s Banana Churro Oatmeal in her air fryer cookbook sounds SUPER delicious though. It’s made a little differently, with the banana slices covered in a yummy flour/cinnamon/sugar coating before they’re air fried to perfection. Um, YUM! So go get her book today and air fry all kinds of scrumptious vegan breakfasts, lunches, and dinners. Mmkay? Mmkay! 🙂

A yummy cinnamon oatmeal topped with cinnamon-sugar-dusted banana slices to make a delicious churro breakfast!

What you'll need:
  • 2 ripe bananas, divided (1 to mash, 1 to slice)
  • 3 tbsp water
  • 1 tbsp ground flax
  • (optional) 1/8 tsp turmeric
  • 1 tbsp maple syrup
  • 1/2 tsp cinnamon, divided
  • 1/2 cup oats
  • 1 tsp coconut sugar (or whichever granular sugar you have on hand)
What you'll do:
  1. Preheat oven at 350 degrees F (176 C) and ready your ramekin (either with parchment paper or nonstick spray - I choose to bake this oatmeal without either).

  2. Mash 1 banana in small/medium mixing bowl. Add water and stir well to combine.

  3. Add ground flax, turmeric, maple syrup, and 1/4 tsp cinnamon and stir well to combine.

  4. Mix in oats completely. Then put mixture in ramekin, slice the second banana, and add banana slices on top. Set aside.

  5. Stir 1/4 tsp cinnamon and 1 tsp sugar in a small bowl. Then sprinkle on top of banana slices as much as you want (I used about half of the mixture).

  6. Bake for 25 minutes and then let cool slightly before enjoying. 🙂
