Remember those Peanut Butter Fudge Bites we made last week? Uh, yeah. We’re making a baked oatmeal with them today. Because why not? Peanut butter can do no wrong, and combining it with apple is a magical experience. Seriously. This is one of my better ideas, and I’m sure you’ll see why when you make this delicious baked apple and peanut butter fudge oatmeal!
What I love about this is that it tastes sweet and yummy, yet it’s a powerhouse of nutrition. With flax/chia, turmeric, fruit, and oats, you just can’t go wrong. It’s a delicious combination that hides seriously awesome nutrition, so it’s a perfect way to start the day.
This yummy dish hides the creamy peanut butter bombs, but the bites of apple with them bring them to life. Man oh man, I would eat this every single day! I just love SO many different flavors of my baked oatmeals that I end up making different ones. But this one is so good! 🙂

A creamy, sweet Baked Apple and Peanut Butter Fudge Oatmeal perfect for breakfast any time! Fruit, oats, and lots of nutrition. Mmm!
- 1/2 ripe banana, mashed (fresh or frozen-thawed)
- 2 tbsp applesauce
- 3 tbsp + 1/2 tsp water, divided
- 2 tbsp powdered peanut butter, divided
- 1 tbsp ground flax/chia
- 1 tbsp maple syrup
- (optional) 1/8 tsp turmeric
- 1/2 cup oats
- 1/2 chopped apple (a sweet apple - I used honeycrisp)
- 6 Peanut Butter Fudge Bites
In a small bowl, mix 1 tsp water and 1 tbsp peanut butter. Then set aside.
Preheat oven at 350 degrees F (176 C) and ready your ramekin (either with parchment paper or nonstick spray - I choose to bake this oatmeal without either).
In a medium bowl, mix mashed banana, applesauce, and water well.
Add 1 tbsp peanut butter, flax/chia, maple syrup, and (optional) turmeric and mix well to combine.
Mix in oats and apple well. You may choose to leave some pieces of apple out to top the mixture with.
Place 1/3 mixture into ramekin. Then add 3 Peanut Butter Fudge Bites and top with another 1/3 of mixture. Add the rest of the Peanut Butter Fudge Bites and top with the rest of the mixture. Add apple pieces on top.
Bake for 20-25 minutes. When you remove it from the oven, swirl peanut butter mixture over the top, let cool slightly, and enjoy!
