What I love about this is that it tastes sweet and yummy, yet it’s a powerhouse of nutrition. With flax/chia, turmeric, fruit, and oats, you just can’t go wrong. It’s a delicious combination that hides seriously awesome nutrition, so it’s a perfect way to start the day.

A creamy, sweet Baked Apple and Peanut Butter Fudge Oatmeal perfect for breakfast any time! Fruit, oats, and lots of nutrition. Mmm!

Course: Breakfast
Cuisine: Vegan | Gluten-Free
Servings: 1
What you'll need:
  • 1/2 ripe banana, mashed (fresh or frozen-thawed)
  • 2 tbsp applesauce
  • 3 tbsp + 1/2 tsp water, divided
  • 2 tbsp powdered peanut butter, divided
  • 1 tbsp ground flax/chia
  • 1 tbsp maple syrup
  • (optional) 1/8 tsp turmeric
  • 1/2 cup oats
  • 1/2 chopped apple (a sweet apple - I used honeycrisp)
  • 6 Peanut Butter Fudge Bites
What you'll do:
  1. In a small bowl, mix 1 tsp water and 1 tbsp peanut butter. Then set aside.
  2. Preheat oven at 350 degrees F (176 C) and ready your ramekin (either with parchment paper or nonstick spray - I choose to bake this oatmeal without either).
  3. In a medium bowl, mix mashed banana, applesauce, and water well.
  4. Add 1 tbsp peanut butter, flax/chia, maple syrup, and (optional) turmeric and mix well to combine.

  5. Mix in oats and apple well. You may choose to leave some pieces of apple out to top the mixture with.
  6. Place 1/3 mixture into ramekin. Then add 3 Peanut Butter Fudge Bites and top with another 1/3 of mixture. Add the rest of the Peanut Butter Fudge Bites and top with the rest of the mixture. Add apple pieces on top.
  7. Bake for 20-25 minutes. When you remove it from the oven, swirl peanut butter mixture over the top, let cool slightly, and enjoy!
