Vegan 7-Layer Dip

You may want to stop everything you’re doing right now and make this vegan 7-layer dip. It’s become a favorite in this house. You could almost call it a staple. It’s SO good and pretty easy to make, even when you make the layers (like the beans, the sour cream, the guacamole, and the cheese) from scratch. But you can easily make these layers with store-bought vegan foods too. So let’s open a bag of tortilla chips and follow the delicious journey to the perfect vegan 7-layer dip.

Layer 1: We start with the bean layer. You can make your beans from scratch, but you can also use canned refried beans. My favorite are the Simple Truth Organic refried beans sold at your local Kroger store. We’ve done both and they’re both good!

Layer 2: Next comes the guac layer. You can make a full-on guacamole, or you can mash avocados for a pure avocado layer instead. Totally up to you. Both are delicious! I think I prefer just the avocado because there’s so much flavor from everything else. But you can’t go wrong either way.

Layer 3: After the guac, we add sour cream! I used my absolute favorite cashew sour cream recipe, but you can buy a vegan sour cream from the store to use instead. That makes it a little easier, but I truly think this homemade sour cream is worth the extra 5-10 minutes!

Layer 4: Once the sour cream is in there, we can add the cheese! I’d say that this layer is my favorite, but let’s be real: I love them all so much. It’s too hard to choose. But this homemade cheese is my favorite and that’s that. You can also use this cheese or use store-bought shreds like Follow Your Heart or Daiya!

Layers 5-7: Lastly, you can add the easy toppings for the last three layers. Tomatoes, olives, and lettuce. Or go fancier with kale or spinach. Or go spicy with jalapeños! The choice is yours, and you can customize however you’d like. 🙂

Then you get this deliciousness you can’t help but dive right into. Seriously, y’all. We eat the whole freaking thing and love it so much. And it’s full of fiber, protein, carbs, and healthy fats. Um, YUM! You can’t go wrong by bringing this dip to your next party. All of my nonvegan friends loved it too, so enjoy!

A scrumptious, easy-to-make Vegan 7-Layer Dip perfect to take to parties to please everyone!

What you'll need:
  • 1-2 cups refried beans* (store-bought or see notes for recipe)
  • 1 cup guacamole** (or simply mash 2-4 avocados)
  • 1 cup sour cream*** (store-bought or see notes for recipe)
  • 1 cup cheese (store-bought or see notes for recipe)
  • 1/2 cup shredded lettuce (or other chopped greens)
  • 1/2 cup chopped tomatoes
  • 1/4-1/2 cup sliced black olives
What you'll do:
  1. Make refried beans (or open store-bought), guacamole (or mashed avocado), sour cream (or open store-bought), and cheese (or open store-bought). Let beans and cheese cool. None of this is included in prep time.

  2. Start with a layer of beans pressed into an 8x8" pan.

  3. Cover beans layer with guacamole.

  4. Cover guacamole layer with sour cream.

  5. Cover sour cream layer with cheese.

  6. Cover cheese layer with lettuce (or other chopped greens).

  7. Top with tomatoes and olives. Then refrigerate until ready to eat.

  8. Refrigerate leftovers for 2-3 days. The lettuce will go bad first, which is why we often don't even add it, but we also don't usually have leftovers.
